Borage is a plant of the family Borraginaceae, characterized by beautiful flowers of an intense blue, star-shaped with five points. Typical of the Mediterranean region, borage leaves are primarily used both for the preparation of some recipes that herbal medicine. Borage, in fact, has many therapeutic properties, it's used as treatment of respiratory problems or rheumatism and nervous system problems. Even the flowers of borage, as well as in the kitchen, are highly valued for bee-keeping, as they have much nectar.

Finely chopped leaves can be added to salads, in fresh cheeses or boiled like spinach. No water should be added during cooking because the plant itself contains enough liquid. Candied flowers are used to decorate cakes but fresh can be added to salad.?
