Sweet Gorgonzola by the spoon

Produced with full cream cow's milk, the rind is wrinkly, brownish red in colour; the paste is soft, spreadable, straw in color with the typical mould. The taste is fresh, buttery, sweet with strong hints of milk and herbs, the aftertaste is round, sweet and creamy. The Gorgonzola Dolce is produced by Tosi in relatively low temperatures, that results to a soft and creamy cheese that can be enjoyed by the spoon.
We all know the classic combination with the mascarpone, perhaps with a garnish of nuts.
And then fruits, vegetables, jam, honey, mustard, chocolate ... but will many foods, match with Gorgonzola?
Each season has its own combination: with raw vegetables (celery, tomatoes, peppers, radishes), or on salads after creating a delicate sauce dressing. Then combined with cooked vegetables (potatoes, squash, broccoli, zucchini). With seasonal fruits (figs, pears, apples, kiwi, strawberries) or the dry season, but especially with the various jams (jam, citrus), mustards mixed fruit or chestnuts or figs and vegetables with sauces (red onion sauce), especially the spicy gorgonzola. Finally with honey, preferred of acacia or wildflower.
The greatest satisfaction is a tablespoon of creamy Gorgonzola on a slice of bread.
