Ammogghiù pantiscu:

INGREDIENTS (for two people): 200 grams of spaghetti, 1 or more cloves of garlic to taste, 200 gr. tomato, a handful of parsley, a tablespoon of olive oil, a bit of oregano, a pinch of salt.

INSTRUCTIONS: Place the chopped garlic, parsle and salt in a mortar and pound vigorously. Add the tomatoes already roasted, peeled (without seeds), chopped and crushed. Complete adding oil and oregano and a few drops of vinegar. Season with spaghetti cooked al dente and warm.
