Asetra caviar or Ossetra caviar comes from Acipenser Gueldenstaedtii sturgeon, a species that has been popular during centuries in the Caspian Sea and Danube River.

This sturgeon normally matures in the 10th-11th year, and can live up to 50 years reaching 20kg.

The caviar is produced from roes of mature Acipenser Gueldenstaedtii of over 11 years of aqua culture. Its color can be yellow or golden. The roe diameter is over 2.9mm. The roes are firm, with a light taste of nuts.

CITES (the convention on international Trade in Endangered Species of Wild Fauna and Flora) is an international agreement between governments. CITES ensures that international trade in specimens of wild animals and plants does not threaten their survival and respects the environment.

At the back of every tin of caviar, there's a label with all the information required by CITES sturgeon species, wild or farmed, country of origin, code of registration for packaging and batch number.

To better appreciate the taste serve it cold using mother-of-pearl cutleries but not metal as it could change the flavour.
