'Nduja is the undisputed queen of Calabrian cured meats, a product with humble origins but which has been on everyone's lips for some years for its unique, exquisitely spicy taste and, after a first taste, absolutely indispensable.

But what is' nduja? It is a particular type of sausage with a soft, creamy consistency and a bright red color due to the high concentration of hot pepper. An all Calabrian specialty but with unclear origins, as happens for many dishes of peasant cuisine. The oral tradition, as we know, is very often vague and imprecise and it should not be surprising if there are so many stories about its birth and the working process. The only certain thing is that it is a product born from the need not to waste anything from the pork meat.

The best way to eat nduja is simply with bread. You can also use it with a bit of tomato sauce to create a great sauce for your pasta (we suggest penne) or use it to create a fantastic rice. 

Great as an appetizer on a crouton, delicious to flavour a tomato sauce, with meat and fish or with Parmigiana aubergines.
