Stracciatella is a typical Apulian cheese originating from the Murge plateau, a fresh stretched curd with a slightly acidic but delicate flavor. Despite being a typical product of the Puglia region, stracciatella is also known in other southern regions, especially Campania, Molise and Basilicata, where it is prepared mainly with cow's milk. This exquisite Apulian specialty consists of high quality mozzarella strips (buffalo or cow's milk) and fresh cream. The mozzarella is in fact "shredded" by hand creating irregular filaments which are then mixed with the cream of the milk.
The "stracciatella pugliese" was born in the early twentieth century, when the rural population to try to face a serious economic crisis, found itself in the unfortunate condition of reinventing itself and, as often happens in these cases, of necessity became virtue. In fact, all the dairy products were reused, in particular the residues of the stretched curd (used for the processing of burrata) which were mixed with the cream, thus giving life to this tasty creamy cheese very often prince of the Apulian and non-Apulian tables. .
