Cinta Senese品種的豬成長時間較一般的長,身體呈黑色,由前腳至肩部卻是白色的。這豬野性極強,半開放式飼養,走動多,肉質就份外結實有彈性;牠們愛吃叢林中的橡木果實,因此風乾後的腿肉更是鹹香甜潤且帶淡淡的果香餘韻

Culatello一直是意大利最崇高的火腿產品。它是由豬的上後腿肉,去皮,去骨和人手把形狀修整成梨形,風乾熟成11至12個月。
