Azienda Agricola G. Ancona

When the territory is a cradle of great culture and is identified with the splendid casket of the Greco-Grecian civilization, land and its fruits become a symbol of sacredness, art and stubborn labor. In Heraclea's Mythology, the worship of Demetra remembers that the Goddess Award for Faithful Friendship was a fig tree, a symbol of prosperity and fortune. It is in these places that a particular production of figs is developed.

The variety of figs "Saverio" and "Fico rosa di Pisticci" are the result of a careful selection of lucano hinterland ecotypes. The Ancona company, which has selected them, houses 12,000 plants (in San Basilio di Pisticci-MT) whose fruits are destined for domestic and foreign markets. For fresh product markets, we use figs whose harvesting period runs from June to the end of November. Only the production of the month of September, characterized by fine-grained, red grape figs, is intended for transformation. Choosing the best fruits is made of preserved rediscovered from ancient recipes: "Ficotto", "Caramel Figs", "Honey Figs" and "Chili Peppers".

The valuable fruits, harvested at the right maturation point, are cooked and caramelized in syrup, then placed manually in pots, retaining all the organoleptic characteristics and remaining turgid and firm. The color, gloss and aromatic properties of the product, together with the right degree of graininess and gelatinosity, allow it to be used directly or in combination with sweet or salty preparations.
