Pedro Ximénez Dry and Sweet Vinegars from Spain are much above ordinary Sherry Vinegar. It all begins with Alvear's award-winning dry and sweet wines of Montilla. These are made exclusively with the Pedro Ximénez grape, giving the wine—and thus the vinegar—tremendous depth of flavour.
It is aged over decades in the criaderas tradition using a series of oak barrels – some as many as 50-years-old – to produce a mouth-watering vinegar. Following the tradition, the barrels or are stored in “bodegas” where the temperature is maintained year-round by opening and closing windows and spaying the sand floors with water.
Pedro Ximenez grapes have a higher sugar content and are partially dried in the sun before they are pressed to make wine or vinegar. This process creates a full-flavoured wine and is quite costly since the amount of juice extracted from the dried grapes is smaller. A small amount of this precious wine is added to the vinegar to add a bit of sweetness and a real depth of flavours.
