The quality of "Extra" is obtained by a hand made careful selection of olives at the right ripeness and processed in mills the same day of production to get this oil extra virgin and fragrant with a slight aftertaste almond. The color is deep green with shades of the gold. The cultivars are: Frantoio, Leccino, Maurino, Pendolino.
