Made with raw goat milk, the outside is covered with a thin wrinkled skin, white in color, the paste is fine, white and sometimes grainy. The flavor is slightly acidic with notes lactic and citric. Agrilanga follows the new product specification developed by the Consortium for the Protection of Robiola of Roccaverano DOP that provides a product strongly linked to the territory, in animal breeding and quality, cheese-making parameters that maintain unchanged the characteristics of milk, GMO free.
SALAD WITH TURKEY BREAST AND ROCCAVERANO ROBIOLA
INGREDIENTS: 4 ounces of turkey breast, 1 handful of pine nuts, salad (lettuce or corn salad, whichever you prefer) a handful per person, Robiola of Roccaverano (if you find it a little 'seasoned is better), a glass of white wine, few drops of traditional balsamic vinegar, 1 clove of garlic, 1 sprig of rosemary (other herbs to taste)
Cut the breast into 4 thick pieces, sauté over high heat in a pan with a little olive oil and herbs, pour in the wine and allow to evaporate all the alcohol, salt, and if it is not cooked add a little broth for bring it to cooking. Keep the cooking liquid and filter it. In the meantime, toast the pine nuts in a frying pan. In a bowl, mix well, with the whisk, the balsamic vinegar with salt, pepper and olive oil (remember to dissolve the salt in the vinegar first and then add the oil otherwise it will not melt). So Serve at will, we suggest a basis of vegetables, then the meat and on top the soft cheese.
