Through the integration and use of highly advanced aqua culture technology, We at Calvisius are able to produce sturgeon and caviar. It is our firm belief that the future world supply of caviar will originate from farmed sturgeon and we at Calvisius believe that this will help save the wild sturgeon from total extinction.

The Sturgeon Roe
Calvisius started in the 90’s to market a high quality caviar from their own sturgeon, prepared using avant-garde production methods, still applying an entirely manual and skilled processing technique to preserve the sensory characteristics, wholesomeness and freshness of "Calvisano Caviar,” which has become one of the exquisite delicacies of world gastronomy – Calvisius Caviar.
The quality of the caviar is the result of the unique characteristics of immaculate processing methods combined with pure water conditions of Calvisano. Thanks to these, farmed caviar of great value has been created, even when compared to the most famous wild caviar. Year round production assures fresh product will be available throughout every season.

Calvisius Caviar has been awarded with certifications of the highest accolade such as ISO 9001, "British Retail Consortium" and "International Foods Standard." We are particularly proud of "Friend of the Sea" certificate for sustainable aquaculture, an important award whose criteria follow the Food and Agriculture Organization of the United Nations guidelines.
