Anchovies fillet from Anzio
Anchovies fillet from Anzio (Rome) sea in extra Virgin olive oil. They're barely salted, with whole sea salt, and melt in your mouth. These anchovies are prepared by hand. Manaide preserves the handcrafted anchioves in oak barrels with integral salt, harvested by hand, and high-quality extra virgin olive oil. The fish is freshly caught locally in a sustainable way (cianciolo) in accordance with the seasons. They use techniques from the Roman era and perfected by the Anzio fishermen already in 1700.
These anchiovies are perfect on a piece of bread with butter, on top of a burrata and of course with pasta and broccolo.
