'You look around and you wonder if it is the earth or the stone that takes care of these age-old olive trees. Plants that grow on stony calcareous soil with good drainage at about 300/400 meters above sea level; small-sized and low-yielding, they are cared for and touched only by human hands'.

This Extra Virgin Olive oil is produced in the area of S. Eraclio Foligno (PG) by indigenous varietals of olives. The harvest take place during October and november with handpicking, handcombing. The pressing is done with a continuous processing machine. The oil appearance is limpid after the filtering, with an average fluidity. The colour is green with a golden tinge. Full-bodied and richly perfumed with scent of artichoke and wild herbs at thenose, the taste is fine with notes of thistle and mint, and spicy hint of black pepper.

“Il Sincero” is an oil produced exclusively from the Moraiolo olive grown in the S. Eraclio di Foligno area of Umbria and is the oldest and primary variety of olive grown on the stony hillside of Viola estate. The fruit is harvested by hand in October at the beginning stage of ripeness, producing an extra virgin olive oil with a unique, intense flavor typical of this variety. Rich and elegant with strong persistent herbaceous notes and an intense fruitiness. Also detectable are strong undertones of fresh unripe olives and almonds as well as artichoke leaves with a nice lingering bitter and pungent finishing aftertaste, which is typical of Moraiolo olive variety endemic to Umbria and Tuscany. High in polyphenols, a natural antioxidant.

It was 1598. Modena welcomed the opulent court of the Dukes of Este, and in doing so become a Capital. As the records of the time proclaim, even then the Giusti family was producing delicacies for the most prized dishes. However the official foundation date of the Company dates back to 1605, by Giuseppe Giusti.

 

The White Giusti condiment is born from a soft pressing of Trebbiano grapes, from which a particularly sweet juice is obtained.

This is then combined with high quality white vinegars and aged in french oak and ash wooden barrels. This process keeps all the fruity and floral aromas of the grapes, creating a very pleasant condiment, thanks to the contrast of its low acidity and the notes of sweet, yellow fruits and dried citrus.

Fresh and balanced, it is extremely versatile and easy to use.
