Roma zucchini, a soft-skinned variety, is versatile and can be used in both sweet and savory preparations. Slice and layer with other vegetables and bake into a gratin. Cut into sticks, breaded and deep-fry for a pleasant snack. It can also be pickled by slicing thinly into coins and combined with onions, garlic, sugar, fresh dill and vinegar. For a simple preparation, slice and roast with olive oil, salt and pepper.
