The Amarone Classico by Nicolis is a great Amarone, from the noble body and the austere taste, deep and powerful. Comes from one of the wineries with more history of the entire Valpolicella, a winery that lives in the heart of the classic, in a fascinating landscape, on a range of small valleys where the soft profile of the hills is characterized by a mild climate; an area that is like a treasure chest, and that gives rise to wines of great complexity and depth. Born from a grape carefully selected, placed in boxes and left to rest in a well ventilated and dry for three months to get to an extraordinary concentration of sugars and aromas. Here begins a slow and long fermentation maceration that lasts for almost a month; then the wine is aged in oak casks for about 30 months and is then left to age in the bottle for at least 8 months. The Amarone Classico by Nicolis that shows a deep ruby red color and dark, which offers powerful and elegant notes of ripe fruit, jam, cocoa, tobacco and leather. She has a great body and a deep roundness, is complex and balanced, without neglecting aspects like softness, warmth and freshness.

It goes well with game, roast meat and hearty flavourful aged cheese. Without food is an extraordinary "meditation wine". The bottle should be opened at least one hour before serving. It should be served in large balloon glasses that favour good oxygenation.

Vinification: After the grapes are selected and harvested, they are placed in small cases in dry, well aired rooms. In this way, the grapes dry naturally and gain an extraordinary high concentration of sugars, glycerine, and aromas. After 3 months, the grapes are softly pressed. Due to the low temperature, the process of fermentation is long and slow; maceration takes also more than one month.
Ageing: The wine makes then an ageing in medium-sized Slavonia oak barrels, where it remains for about 30 months. The bottle ageing is at least 8 months before release.
