'You look around and you wonder if it is the earth or the stone that takes care of these age-old olive trees. Plants that grow on stony calcareous soil with good drainage at about 300/400 meters above sea level; small-sized and low-yielding, they are cared for and touched only by human hands'.

This Extra Virgin Olive oil is produced in the area of S. Eraclio Foligno (PG) by indigenous varietals of olives. The harvest take place during October and november with handpicking, handcombing. The pressing is done with a continuous processing machine. The oil appearance is limpid after the filtering, with an average fluidity. The colour is green with a golden tinge. Full-bodied and richly perfumed with scent of artichoke and wild herbs at thenose, the taste is fine with notes of thistle and mint, and spicy hint of black pepper.

It received a lot of acknowledgments in national and international competitions. Our organic extra virgin olive oil is made from a local olive variety known as "Tonda Iblea", a cultivar of the Monti Iblei area of south east Sicily. The extra virgin oil is obtained by cold pressing the olives with a temperature-controlled squeezing system (Alfa Laval and Pieralisi olive oil processing systems). The oil is packaged in various sizes glass bottles and in aluminium canisters.

Acidity level is below 0.2%.

We conserve it in small 500 liters stainless steel storage pins at a controlled temperature of 16 Celsius degrees, in order to avoid oxidation processes. Then we bottle it inside the farm, following the haccp method. The oil called “Particella 34 cru” comes entirely from the parcel number 34 of the cadastral map number 76. This is the only field of the farm area that is not well watered. It is a true “cru”. Cultivar Tonda Iblea. The Pianogrillo oil is sold as biological.

An Amazing liquid, with a full bodied bouquet and fruity notes that makes it a unique product. The slow ageing in barrels of different types of wood, makes it ideal as a complement to great recipes or to be tasted in drops at the end of the meal.

The “Riserve” are the most exclusive of the Giusti collection and is produced each year in extremely limited quantities, extracted from some precious series of barrels in production since 1700. One of these barrels, coded as A3, was brought by Giusti to the National Fair of Florence in 1861, where a “vinegar of 90 years” was awarded a gold medal, successfully repeated at the Expo in Paris in 1889. 

In keeping with this precious production, the case is composed of the 5 types of woods that make up a typical series of barrels; the front label is engraved in 24-carat gold, while the back label is made with the ancient technique of letterpress printing, using a classic lead character font of Modena from the 19th century.

The “Riserve” are the most exclusive of the Giusti collection and is produced each year in extremely limited quantities, extracted from some precious series of barrels in production since 1700. One of these barrels, coded as A3, was brought by Giusti to the National Fair of Florence in 1861, where a “vinegar of 90 years” was awarded a gold medal, successfully repeated at the Expo in Paris in 1889.

In keeping with this precious production, the case is composed of the 5 types of woods that make up a typical series of barrels; the front label is engraved in 24-carat gold, while the back label is made with the ancient technique of letterpress printing, using a classic lead character font of Modena from the 19th century.
