The Sweet Salt of Cervia - Medium Fine

The sweet natural medium fine sea salt of the ancient Cervia salt pan is collected according to the traditional method. Sun-dried and washed only with high-salinity water, it i sneither bleached nor ground. Additive-free, it preserves its purity and the rich characteristics contained in the sea water. Its natural humidity makes it highly soluble and its sweetness perfect for food use since flavours are not altered.
The name "Popes salt" goes back to 1440 when the city of Cervia was used to send every year its sweet salt to the papal court in Rome.
Nowadays, a delegation of the salt pan goes to Rome in order to give the Pope the sweet salt of Cervia as a present. 

This natural salt is not refined, treated or artificially dried, therefore it may appear damp and lumpy.

Situated on the Chianti’s hillsides overlooking the town of Arezzo, the estates of the Count Borghini Baldovinetti de’Bacci exemplify what the French call “Terroir”. To truly understand the secrets behind these great wines, one needs to understand the history of this precious land, and the family that has owned it for centuries. The first document proving the existence of vineyards on the property is dated 1416, when Francesco de’ Bacci sold a vineyard to finance the painting of the frescoes in the family Chapel by the famous painter Piero della Francesca. Just after the Second World War the estate committed to viticulture and winemaking, and then started bottling in the 1960′s. Today the winery exports worldwide.

From Frantoiano, Leccino and Moraiolo olives, it is cold extracted with milling within 24 hours after harvesting.

Shortly filtered, green yellow with golden highlights in colour. Fruity notes of apple and artichoke sour, slightly spicy aftertaste. Medium density.

Particella 34 Organic Extra Virgin Olive oil

Rich of polyphenols with very low peroxides it is a natural anti-oxidant. It received a lot of acknowledgments in national and international competitions. Our organic extra virgin olive oil is made from a local olive variety known as "Tonda Iblea", a cultivar of the Monti Iblei area of south east Sicily. The extra virgin oil is obtained by cold pressing the olives with a temperature-controlled squeezing system (Alfa Laval and Pieralisi olive oil processing systems). The oil is packaged in various sizes glass bottles and in aluminium canisters.

Acidity level is below 0.2%.

We conserve it in small 500 liters stainless steel storage pins at a controlled temperature of 16 Celsius degrees, in order to avoid oxidation processes. Then we bottle it inside the farm, following the haccp method. The oil called “Particella 34 cru” comes entirely from the parcel number 34 of the cadastral map number 76. This is the only field of the farm area that is not well watered. It is a true “cru”. Cultivar Tonda Iblea. The Pianogrillo oil is sold as biological.

The oil has a deep smell of green tomato and just cut grass, a trace of artichoke. It is delicate, round.
