Veal on broccolini compote - 4/36 months

This puree is a jewel: finally there is a fresh meat product, specific for weaning, safe, controlled and with seasonal vegetables such as broccoli.

Finally an alternative to freeze-dried or homogenized meat, ideal for introducing animal proteins into our baby's nutrition! We chose the veal, other than calf and beef, because it is easily digestible, very tender and low in fat.

In order not to lose its important characteristics, we cook it in steam and vacuum. In each piece of pulp, we put the whole dose of meat prescribed by the weaning pediatricians: 40 gr.

And what about broccoli? The king vegetable of this season: nowadays everyone knows their anti-tumor properties but did you know they are a great help even in cases of lung diseases, asthma and respiratory problems? Of course they are great allies even in case of constipation! Do not worry about the very particular and intense taste: try this pappa, enjoyable by all the little ones and indeed is a way to make them appreciate this vegetable!

Rice with with Sturgeon and Pumpkin - 8/36 months

This puree is prepared with a seasonal vegetable, the pumpkin, and a very special fish! We have spent months in long researches to find a fish really suitable for the little ones, and in the end we have selected the sturgeon: poor in fat but rich in Omega 3 and vitamins A and D, it has white and soft meat, it has a delicate taste and no thorns! It has a very similar texture to meat, and it is also loved by those who usually do not like the fish taste. Our children call it the chicken fish! In each puree we put the whole fish dose prescribed by the weaning pediatricians: 40 gr.

We chose to accompany the sturgeon with the pumpkin: rich in fiber, vitamins, mineral salts and even omega 3, for toddlers it is a real touch! It re-equilibrates the intestinal flora and even helps asleep, as it is also rich in magnesium! Its slightly sweet flavor is perfectly matched with our sturgeon! This risotto is really delicious, even for the adults!

The Pancetta Cinta Bio represents the section of meat of the thorax and the stomach with the pig skin. The pieces are cut and massaged with salt and garlic and salted down for about 15 days; than cleaned and flavoured with black paper and put into store room for the seasoning. The product is in pieces of approximately 3kg with a thickness of about 4cm. Because of the wild breeding of the swine it is very difficult to obtain a lot of fat. Pancetta Cinta Bio that is very fatty is there for highly appreciated and has only one or two stripes of red meat. When sliced the white fat turns pink.

The Salame Bastardo Bio uses the lean part of the swine's shoulder and fat from the same animal. This is added in the quantity of 20% cut in small cubes of 1 cm for the large diameter salami, while it is grinded for the thinner salami. The mixture is enhanced with salty pepper, ground pepper, garlic. It is then made to a sausage, tied up and left to season in appropriate rooms for at least 60 days. The slice is brown-ish red and the white of the small fatty but tender cubes stand out giving this salami topical flavour and taste.

Panarese pasta factory uses only durum wheat semolina cultivated from local farmers of the Val D'Orcia, a little valley situated in a naturalistic park on the south of Tuscany, patrimony of the UNESCO. The quality of Panarese pasta starts from the raw material: the durum wheat semolina which is particulary rich in gluten thanks to the relative dryness of the area and the physical characteristics of the soil. It continues with the total control of the production from the seed selection, the wheat grinding, to the finished product. Our pasta is extruded through the bronze die by low temperature drying.

The vines present in the vineyards are those traditional ones like the Negramaro, Primitivo, black Malvasia of Lecce, Aleatico, Montepulciano of Abruzzi and Aglianico as red berry.

The name derives from the location of the vineyard, situated in the locality of San Giovanni in a soil that is very resistant to dryness and particularly suitable for Primitivo grapes.

The rest is left to the thousands of microorganisms that live in the earth and that keep the earth full of life. The respect we have for nature also accompanies us in the process of transforming grapes into wine. We don’t take any short cuts: enological synthetic and corrective products are not used and will never be used at Tenuta Mara. We leave it to the earth and the stars to measure the rhythms’. MaraMia 2012, fruit of the third grape harvest of Tenuta Biodinamica Mara, is mentioned in the Yearbook of the Best Italian Wines 2014 by Luca Maroni, who reviewed it as the best biodynamic red wine of the year.
