Podere Bioamiata is the widest biological breeding of "Cinta Senese" in Italy and it extends on 240ht of woods and pastures between Val d'Orcia and Monte Amiata, above 700m. of altitude. Our main care embrace the revaluation and the protection of this specie, even with the continuos scientific advistance of City Universities like Firenze and Perugia. However, our main support for the whole productive cycle is nature, the only "added ingredient" fit to exalt the taste of our products.

Capocollo Cinta Bio is the prime neck which is the part that goes from the back neck to the fifth rib.

It is prepared massaging the piece with a mixture of salt, pepper and garlic and than covered for tree days; after this period the product is cleaned and covered with a straws paper in order to begin the long seasoning in special storerooms. The final product has a lengthened shape of about 35cm and diameter of 7-8 cm and the weight of 1.5kg and is than nicely wrapped with yellow straw paper and tied up with hemp strings.

The strong red part of the lean is visible at the cutting and the large white-pink marbeling of the fat is indication of the height quality of the Capocollo Cinta Bio.

Pici are a type of hand-made pasta, similar to spaghetti but larger, typical of southern Tuscany, Val d'Orcia and Val di Chiana.

Panarese pasta factory uses only durum wheat semolina cultivated from local farmers of the Val D'Orcia, a little valley situated in a naturalistic park on the south of Tuscany, patrimony of the UNESCO. The quality of Panarese pasta starts from the raw material: the durum wheat semolina which is particulary rich in gluten thanks to the relative dryness of the area and the physical characteristics of the soil. It continues with the total control of the production from the seed selection, the wheat grinding, to the finished product. Our pasta is extruded through the bronze die by low temperature drying.

The agricultural company Valle dell'Asso represents the continuity of a wine tradition begun time ago. The vines, raised to counter espalier with a density of 5000 stubs for hectare, with an age from 1 to 35 years, are located in the towns of Galatina, Cutrofiano, Sogliano Cavour and Salice Salentino. The vines present in the vineyards are those traditional ones like the Negramaro, Primitivo, black Malvasia of Lecce, Aleatico, Montepulciano of Abruzzi and Aglianico as red berry.

The name derives from the location of the vineyard, situated in the locality of San Giovanni in a soil that is very resistant to dryness and particularly suitable for Primitivo grapes.
