Sausage with Fennel

Sausage with fennel seeds is a culinary speciality traditionally linked to central-southern Italy. Whole and chopped fennel seeds and salt are added to the pork meat paste. The fennel seeds give the product an aromatic flavour and thanks to their particular characteristics aid digestion. It does not contain gluten and lactose.
To enjoy this delicacy to the full, it is recommended to cook the product in a pan with butter, herbs and wine, pricking the surface of the sausage to cook the inside more evenly. This dish can be accompanied by sautéed mushrooms or potato purée.
