I prosciutti cotti sono ottenuti unicamente dalle migliori cosce fresche di suini, disossate mantenendo l'integrità delle masse muscolari e le caratteristiche organolettiche della carne.
Le cosce selezionate vengono insaporite seguendo una ricetta esclusiva Levoni e massaggiate delicatamente e lentamente in modo da ottenere il miglior assortimento degli aromi e una maggior coesione delle masse muscolari. Segue, infine, una lenta fase di cottura a vapore. I prosciutti cotti al taglio si presentano morbidi, di colore rosato con il grasso compatto. Il gusto è sempre dolce, delicato ed equilibrato.

The mortadella Oro externally boasts a nice biscuit colour given by cooking, the slice is rosy with consistent, firm, white lardons, which are evenly distributed, as well as pistachios. The history of mortadella is ancient, so that at the Museo Civico Archeologico of Bologna there are two Roman sepulchral steles on which the proofs of its centuries-old history can be traced. A stele depicts a pestle with a mortarium used to chop and mix meat, salt and spices, the ingredients of mortadella, the other one depicts the suarius - aka the guardian of pigs - near his pigs. San Daniele DOP Contessa Riserva 24 Months Cured Ham
The slice in the muscular part is pinkish red, with white or pinkish-white streaks ("marbling"). The covering fat is white and compact. The aroma is delicate and can become more persistent if the product is very matured. The flavour is well balanced between the sweet note and the typical aromas of matured meat, with the result of a very round and particularly pleasant taste sensation. Once the product has been trimmed, cut into very thin slices using a slicer or by hand. The art of knife cutting is always extraordinary.

Mozzarella di Bufala 250g
Il caseificio Ponte di legno è un piccolo produttore artigianale situato in Amaseno (Frosinone) nella regione del Lazio. Attualmente i circa 500 capi di bestiame sono utilizzati per la produzione di mozzarelle, nodini, trecce, ricotte fresche e speziate, caciotte, scamorze, caciocavalli, schiacciatine, mozzarelle affumicate, ricotta secca, affumicata, formaggi primo sale bianchi, speziati o stagionati, e la prelibatissima cremosa di bufala. Tutta la produzione viene realizzata esclusivamente con il 100 percento di latte di bufala che viene lavorato artigianalmente crudo senza ricorrere alla pastorizzazione.
Speck affettato
Il nome Levoni è sinonimo di tradizione, di profumi, aromi e gusti eccellenti e unici; Levoni sono i salumi "Quelli Buoni". Questo perché fin dal primo salame prodotto, la famiglia Levoni non è mai scesa a compromessi sulla qualità.
Lo speck è legato per tradizione al Trentino Alto Adige, dove viene prodotto fin dal 1300. CastelSpeck, lo speck di Levoni si caratterizza per la ricetta esclusiva perfezionata negli anni '50. E' ottenuto da cosce particolarmente magre, rifilate a regola d'arte, salate e aromatizzate con aglio, pepe, bacche di ginepro, noce moscata e altre spezie ed erbe aromatiche. Lo speck Levoni è delicatamente affumicato in modo naturale. La forma è squadrata e regolare e al taglio la fetta è alta, per la presenza della fesa. La stagionatura è di minimo 4/5 mesi. Il gusto è delicato e aromatico. Senza glutine e lattosio.

La lingua bovina viene insaporita con aromi naturali, privata poi della pelle e riposta in uno stampo dove viene cotta lentamente a bagnomaria. Non contiene fonti di glutine e lattosio.
Passata di Pomodoro BIO
La passata di pomodoro ottenuta con pomodori tondi. Inconfondibile per il suo aspetto cremoso, dal tipico colore rosso e dal dolce sapore dei pomodori freschi appena raccolti. Molto utilizzata da chi non ha molto tempo per cucinare, ma che non vuole rinunciare alla genuinità ed al sapore della tradizione. Non necessità di una lunga cottura.
La trasformazione dei prodotti da agricoltura biologica viene svolta in totale assenza di sostanze chimiche di sintesi e nel pieno rispetto dell’ambiente.

Amalfi Lemons
This fine, and fleshy lemon, rich in essential oils, gives the liqueur, an unequaled aroma and taste. Another characteristic that makes “Sfusato lemons”world famous is the fact that they can be preserved for long periods. Because of the particular micro climate of the Amalfi Coast, the right mixture of mountain and sea air and the chemical properties of the terrain, a geographical indication status (P.G.I.) has been conferred by the Italian authorities.
The first lemon trees, were brought to the Amalfi Coast by the Jewish population, during the first century B.C. By this time the Amalfi Republic had reached its apex, around 1000 A.D., lemon trees had spread throughout the Amalfi Coast territory.
Trade between the Amalfitani and the Byzantines flourished from the eighth to the thirteenth centuries. From Amalfi shiploads of precious stones, textiles and spices were unloaded and, last but not least, citrus trees to be cultivated all over the region.
Healing properties were soon discovered and Sfusato lemons were used in medicines by the famous Salerno Medical School.

A popular yet elegant classic. Soft on the nose and lively in the mouth, with exuberant surprises of split black pepper.
Typical salami of the Veneto region. The mix texture is tender, the flavor is a distinctive and particularly aromatic also thanks to the long maturation. Levoni proposes this salami with a leaner mix while maintaining the characteristic kidney shape.
Salame Schiacciata Piccante spicy
A fresh, piquant bouquet of chilli pepper exalted by fennel seeds. Spiciness reigns, tempered only by an aromatically seasoned soul.
The external appearance is free of mould and boasts a beautiful red accentuated by chili. When sliced the minced meat appears interspersed with lard cubes. The aroma is complex, combining the typical notes of sweetness of fennel seeds with the intense aroma of chili pepper. The taste is that of a deli meat of great character, sharp and balanced.
The schiacciata piccante is a salami of medium size, its shape is due to the fact that in some areas of Italy - where the climate is warmer and dry - a good and proper maturation would become difficult; so the human ingenuity overcame the hurdle making a crushed salami - smaller diameter best maturation!
Smoked Pancetta
Smoked and aromatic, a pleasurable harmony of spiced seasonings, gathering white pepper, cloves, nutmeg, coriander and juniper in a striking bouquet.
Biscuit color given by smoking. When cut pink streaks of lean muscle in a beautiful tall, firm, pearly white fat. Persistent smell of smoke leaving room for the aroma of matured meat and hints of spices. The sweet and smoked flavour, with suaveness. Nice soft texture.
This deli meat immediately reminds us of the English Bacon. It is a pancetta with rind, trimmed, salted and flavoured. It follows a delicate smoking with a selection of Trentino woods and a slow maturation.

Fresh Wild Catch Seabass

There are many fish around the world with bass in the name, but the fish we’re looking at here is the European sea bass or Dicentratus labrax. It’s caught off all coasts from Norway and the Baltic round to the Black Sea and also off the west coast of Africa, but nowhere else in the world, although the American striped bass is a close cousin. This is a coastal fish, often found in estuaries. It has a wide diet including smaller fish of its own species.
Sea bass has attractive silvery skin. The flesh is a dull white, which cooks to brilliant white like cod.
Wild Catch Dover Sole

The ‘king’ of the soles, this superb fish has inspired many classic dishes such as Poached sole Bonne Femme, sole Veronique and sole a la Meunière. With a dark brown skin and a longer and narrower shaped body than other flatfish, Dover sole has a crisp white flesh, firm to touch, with an almost sweet taste.
Dovers range in size from 340g to 1.3kg. As it’s often too firm to cook immediately after being caught, it is usually best after one or two days when both texture and flavour is enhanced. Fish of 400-450g are perfect for serving whole a la meunière – skinned both sides, dusted in seasoned flour and pan-fried. A 680g fish will provide two portion-size fillets.
Salame Ungherese - Gold Medal
This is the salame that had allowed Ezechiello Levoni to win the Gold Medal at the international expo “Modern Arts & Industry” of London in 1913. Its very fine grinding, a thorough selection of spices processed at the right time, the light slow, cold smoking with selected woods from Trentino and its maturation give Ungherese Levoni the typical characteristic and uniqueness which typify it.
Its delicate smoky fragrance promises a pleasant aromatic complexity. Exuberantly soft, sweet and smoky on the palate, a taste that engages and delights. The rigorously finely minced mix is enriched with mild paprika. The ancient method of natural smoking gives it an unrivalled taste. With his beautiful bright red colour, cohesive slice, smooth texture and rounded and balanced aroma, garlic, paprika and natural smoking can be perceived. Upon tasting its texture is interesting, it releases a complex, sharp flavour in the mouth with notes of paprika, smoke, matured meat and perfect balance of lean and fatty meats.

Roasted Turkey Breast 200gr
Turkey's breast, roasted using a very low quantity of salt. The slice has an homogeneous light pink colour with hazel-coloured edges, the signs of the grill on which the cooking is made are evident.
Taste sweet and lightly savoury, with intense notes of roasted and delicate hints of aromatic herbs. This product is free from gluten, added polyphosphates, monosodium glutamate.
The golden colour is the result of cooking and does not result from the use of colorants.
Perfect as a cold dish, add a pinch of salt and pepper ang good extra vergin oilve oil.

Although the name tagliolini sounds similar to tagliatelle, the two are not really the same except for the fact that both are traditionally egg pasta cut into ribbons.In fact, the word ‘taglia’ means cut in Italian and the difference is actually in the cut! Tagliolini are long strands of pasta somewhere between capellini and tagliatelle in width. Each strand of pasta is usually around 2-3mm wide and is sometimes slightly cyndrical. I say sometimes because information about this pasta is rather confusing.

La mortadella è uno dei salumi più famosi ed antichi della tradizione gastronomica italiana. E' un insaccato cotto di carne di puro suino con l'aggiunta di grasso cubettato. L'etimologia del nome si può far risalire a "Mortarium", strumento utilizzato dai Romani per pestare le carni oppure a "Myrtatum", nell'antichità carne insaccata e condita con bacche di mirto. Mortadella dall'impasto morbido e dal gusto più aromatico e appetitoso. Non contiene fonti di glutine, lattosio e polifosfati aggiunti.

Il branzino è caratterizzato da corporatura allungata, colore grigio-verdastro sul dorso, con qualche punteggiatura nera in fase giovanile, e ventre argenteo; è provvisto di due pinne dorsali, due pinne toraciche, due pinne addominali ed una pinna anale; nell’opercolo sono presenti due spine e il preopercolo è spinoso sul bordo inferiore. Si tratta di un predatore puro, provvisto di denti aguzzi e sottili. Le sue carni risultano ricche in proteine ad alto valore biologico ed in acidi grassi polinsaturi della serie n-3 ed n-6, che rivestono un ruolo di primaria importanza per la salute umana in quanto, se assunti regolarmente con l’alimentazione, risultano attivi nel ridurre l’incidenza delle malattie cardiovascolari e dei tumori.
Astice Blue Fresco
Di colore bluastro, con chiazze gialle sul dorso e ventre chiaro, possiede due paia di antenne, un paio lunghe ed uno corte e due chele, una più grande ed una più piccola, per poter svolgere meglio compiti diversi. Il carapace è liscio ed incavato, possiede due spine, situate vicino agli occhi. Può raggiungere il mezzo metro di lunghezza, ma gli esemplari comuni misurano dai 30 ai 40 cm. Meno pescato di quello americano, il sapore dell'astice europeo è ritenuto migliore.

Carbonara Guanciale Pork cheek
Guanciale is an Italian cured meat product prepared from pork jowl or cheeks. Its name is derived from guancia, the Italian word for 'cheek'. This pork cheek is cured and generously seasoned with amongst other spices, lots of black pepper. Guanciale looks a little like bacon, the consistency and taste however is much, much more delicate.
Pork cheek is rubbed with salt and spices (typically ground black or red pepper, thyme or fennel, and sometimes garlic) and cured for three weeks or until it loses approximately 30% of its original weight. Its flavor is stronger than other pork products, such as pancetta, and its texture is more delicate. Upon cooking, the fat typically melts away, giving great depth of flavour to the dishes and sauces it is used in.
Guanciale may be cut and eaten directly in small portions, but is often used as an ingredient in pasta dishes such as spaghetti alla carbonara and sauces like sugo all'amatriciana.

Sicuramente fra i prodotti ittici degli stagni dell’Oristanese, la bottarga è quella che ha una lunga storia e altrettanto lunga fama per la bontà della materia prima, il muggine o cefalo degli Stagni di Cabras, e per le capacità di trasformazione da parte dei lavoratori delle peschiere. Negli stagni di Cabras , un piccolo comune sulla costa centro occidentale della Sardegna, i muggini trovano un loro perfetto habitat naturale dove poter nutrirsi e crescere. Il microclima di Cabras è infatti perfetto per questo tipo di pesce. La qualità dei muggini risente molto dell’ambiente in cui sono vissuti e dell’alimentazione che hanno conseguito, due aspetti che fanno dei muggini di Cabras dei predestinati. A settembre quando i muggini sono più panciuti vengono pescati e selezionati solo quelli con le sacche ovariche più grandi. Inizia poi la delicatissima fase di lavorazione, vengono estratte delicatamente le due sacche di uova in modo da conservarle ben integre, purificate e messe sotto sale per un periodo variabile a seconda delle dimensioni.
Vengono poi pressate e messe ad asciugare per la stagionatura in appositi luoghi secchi e ventilati. Tutta la fase di stagionatura viene seguita scrupolosamente in modo da esaltare al massimo il gusto di questo rarissimo prodotto. La Bottarga di Muggine di Cabras è apprezzata per la sua morbidezza, il suo accentuato gusto salmastro e per una nota di mandorla secca che la contraddistinguono da tutte le altre bottarghe in commercio. Il colore va dall’oro all’ambrato a seconda della stagionatura, ed una particolarità che contraddistingue questa bottarga è il “cappuccio”, un piccolo tratto di placenta che rimane attaccato all’inizio della baffa.

Taleggio DOP
Il Taleggio è un formaggio di origine antichissime, forse anteriori al X secolo. La zona di origine è la Val Taleggio in provincia di Bergamo , da cui deriva il nome. I valligiani avendo l'esigenza di conservare il latte eccedente il consumo diretto, iniziarono a produrre del formaggio che, una volta stagionato in grotte o casere di vallata, poteva essere scambiato con altri prodotti o commercializzato. La crosta del Taleggio deve essere rosata naturale: significa che la maturazione è avvenuta correttamente e non vi è stato alcun trattamento sulla superficie ad esclusione delle normali spugnature con acqua e sale legate al corretto processo di stagionatura. La pasta è normalmente più molle immediatamente sotto la crosta, questo poiché la maturazione avviene dall'esterno verso l'interno (maturazione centripeta). Perciò quello che può sembrare uno strato di formaggio molto grasso sotto la crosta, è in realtà formaggio più maturo.La superficie dell'intera forma di Taleggio riporta il marchio a quattro cerchi, parti del marchio sono ben visibili anche qualora il Taleggio sia venduto porzionato in quarti di forma od in altre pezzature.
Gorgonzola Dolce DOP al cucchiaio
Prodotto con latte vaccino intero raccolto esclusivamente sulle colline fra il lago d'Orta e il lago Maggiore. La crosta è rugosa e rosata, la pasta è cremosa, di colore paglierino scarico, screziata per lo sviluppo di muffe con venature verdi-blu. Estremamente dolce, con sensazioni lattiche e di frutta matura, l'erborinatura rende accattivante e caratterizzante, senza risultare invadente. Un tempo l'erborinatura veniva creata effettuando una lavorazione alla sera, la cagliata veniva appesa e lasciata spuragare. Il giorno seguente veniva effettuata un'altra lavorazione e la forma veniva preparata alternando strati di cagliata fresca e strati di cagliata del giorno precedente. In questo modo le due cagliate non si univano perfettamente e rimanevano delle fessure dove spontaneamente si sviluppavano le muffe. Il termine erborinato deriva da 'erborin' ovvero prezzemolo in dialetto lombardo, per la somiglianza del colore con la muffa.

Bra Tenero is a DOP cheese produced using full-cream cow's milk from the province of Cuneo. It has a short ripening period, dictated by the discipline that regulates its production, which is just 45 days. Thanks to its delicate flavour, Bra Tenero is recommended for the production of excellent fondues.

Olio prodotto nell'area di S.Eraclio Foligno (Pg) da olive di varietà autoctone, La raccolta vviene nei mesi di ottobre e novembre rigorosamente a mano per brucatura agevolata. la frangitura viene effettuata con un impianto a cilco continuo.
L'olio si presenta limpido dopo il filtraggio, con una fluidità media. Il colore è verde con riflessi gialli dorati. All’olfatto è ampio e ricco di note vegetali di carciofo ed erbe di campo, al gusto è fine con sensazioni di cardo e menta con sentori speziati di pepe nero.

Balsamic Vinegar has been synonymous with the culture and history of Modena since time out of mind. It owes its existence to the specific environmental features of the area, which has combined with the skill, wisdom and expertise of the human factor in a unique blend to create an exclusive product, found only in what are today the Provinces of Modena and Reggio Emilia (in other words, the old Este Dukedom). The best-known producer of the time was Giuseppe Giusti, and the family firm still plays an active part in the Consorzio Aceto Balsamico di Modena. The first references to its production of Balsamic Vinegar dates back to 1605, and it possesses certificates of participation at a large number of fairs exhibitions.
From the regulatory point of view, the first ministerial authorisation to produce "l'Aceto Balsamico del Modenese" dates from 1933.

Roman Broccoli
Romanesco broccoli (also known as Roman cauliflower, Broccolo Romanesco, Romanesque cauliflower or simply Romanesco) is an edible flower bud of the species Brassica oleracea. First documented in Italy, it is chartreuse in color. The Romanesco has been grown in Italy since the 16th century and has a striking appearance because its form is a natural approximation of a fractal. When compared to a traditional cauliflower, its texture as a vegetable is far more crunchy, and its flavor is not as assertive, being delicate and nutty.
Romanesco superficially resembles a cauliflower, but it is chartreuse in color, and its form is strikingly fractal in nature. The inflorescence (the bud) is self-similar in character, with the branched meristems making up a logarithmic spiral. In this sense the bud's form approximates a natural fractal; each bud is composed of a series of smaller buds, all arranged in yet another logarithmic spiral. This self-similar pattern continues at several smaller levels. The pattern is only an approximate fractal since the pattern eventually terminates when the feature size becomes sufficiently small. The number of spirals on the head of Romanesco broccoli is a Fibonacci number. Nutritionally, romanesco is rich in vitamin C, vitamin K, dietary fiber, and carotenoids. The causes of its differences in appearance from the normal cauliflower and broccoli have been modeled as an extension of the preinfloresence stage of bud growth, but the genetic basis of this is not known.

Sperlari has been producing it since 1836, following an accurate process that ranges from selecting the best raw materials, selected and harvested at the right point of ripeness, to candying, to then be immersed in a sugary syrup flavored with mustard, the unmistakable essence that characterizes the product with an original sweet-spicy flavor.
Piedmont Leeks
Leeks, known scientifically as Allium porrum, are related to garlic, onions, shallots, and scallions. Leeks look like large scallions, having a very small bulb and a long white cylindrical stalk of superimposed layers that flows into green, tightly wrapped, flat leaves. Cultivated leeks are usually about 12 inches in length and one to two inches in diameter and feature a fragrant flavor that is reminiscent of shallots but sweeter and more subtle.
With a more delicate and sweeter flavor than onions, leeks add a subtle touch to recipes without overpowering the other flavors that are present. Although leeks are available throughout the year they are in season from the fall through the early part of spring when they are at their best.

Provolone Del Monaco DOP
Provolone is an Italian cheese made from cow’s milk and whose origins lie in Southern Italy. Though many countries have started producing this cheese, traditional Provolone is still produced only in the northern region of Italy. Both Provolone Valpadana and Provolone del Monaco are granted DOP designation by the European Union to ensure that cheese is produced under strict supervision using specific methods to guarantee supreme quality.
Provolone del Monaco is a semi-hard, kneaded-curd, matured cheese produced from the raw milk of cows reared within the province of Naples. For the product to maintain consistent quality it follows certain procedures and criteria. Twenty percent of the milk comes from Agerolese cows to give Provolone del Monaco its unique flavour. The cheese should be matured for a minimum of 180 days, at the end of which the product should weigh 2.5 kg but not more than 8 kg. The pear shaped body of the Provolone tied with raffia is cream coloured, elastic, compact and has characteristic eye holes which may increase towards the centre of the cheese. It has a high fat content of 40.5%. Thanks to the stringent guidelines and intricate processing, the cheese turns out to be extremely flavourful with sweet, buttery aroma with a light, pleasant spicy taste. With extended maturation period, the taste and aroma of the cheese becomes more robust and spicier.
The ripe flavour of the cheese goes along with full-bodied and aged red wines. At the table, it could be served with hot chutneys, homemade breads and flat breads.

Classic butter contains 83% milk fat, 1% protein and carbohydrate, and 16% water. But when butter is used in the kitchen, the water evaporates and sometimes causes problems and imperfections: for this reason, the great chefs choose to clarify it. Clarifying the butter means removing the part of the water, carbohydrates and proteins.
Why choose clarified butter?
Clarified butter lasts longer
The presence of water inside the butter accelerates its expiration. By removing the water, the butter lasts longer without the need for any preservatives or additives. It is precisely for this reason that the expiry of clarified butter is much longer.
Clarified butter has a better yield
When the butter is heated, the water evaporates and therefore about 16% of what is put in the pot is lost. Using clarified butter, nothing evaporates, and therefore about 16% less can be used.
The clarified butter in the pan does not pop
How many times during the frying we have soiled the stove or our dress! This happens because the drops of water present in the butter "crackle" and splash. By cooking with clarified butter, which does not contain water, we will no longer have this problem.
Clarified butter does not blacken
When the butter is used in a pan, black dots appear after a short time: these are carbohydrates and proteins that are burnt. The clarified butter does not contain any and therefore will tend to remain clear and not to "dirty" your recipes.

The red onion from Tropea, Italy, (Italian: "Cipolla Rossa di Tropea") is a particular variety of red onion which grows in a small area of Calabria in southern Italy named "Capo Vaticano" near the city of Tropea. This onion has a stronger and sweeter aroma and the inner part is juicier and whiter than the other red onions. It is completely possible to make a marmalade with this red onion. In March 2008, the European Union registered the Protected Designation of Origin mark for the onions produced in this particular area.
The shape of its bulbs, of a deep purple color, vary from round to oval to elongated. The onion’s extraordinary sweetness, its delicate scent, its lightness and enjoyable taste, which derive from the morphological peculiarities of the soil and microclimate where it is grown, make it a much sought after ingredient by gourmets and chefs.
As if its wonderful taste wasn’t enough, the Tropea onion has proven health benefits, known since ancient times. Capers are the budding flowers of a perennial plant that grows spontaneously among the limestone-rich rocks. The most widespread species of Caper in the Mediterranean - and therefore in Sardinia - is the "spiny" which is characterized by its fragrant and showy flowers. The plant grows in arid and semi-arid climates and blooms between May and September; the caper is harvested early in the day and at sunset.
Origins: the first news on the cultivation of the caper plant in the Selargius area dates back to the early 1800s when this fruit was used for therapeutic power. But it was only in 1850 that the production of the caper began to grow in size and importance by the family of Domenico Dentoni, mayor of the city of Selargius who promoted the intensive development of this cultivation and the use of both herbal and food products. And so it was that in the poor harvest years of grapes, wheat and olives it was precisely the capers producers and traders that kept the local Selargino market active.
Processing and use: the production and transformation of capers has remained unchanged over time, in fact the methods are always the same, handed down for generations. The use of wine vinegar derives from the ancient wine tradition of the territory of Selargius, Monserrato and Quartucciu while the salt came from the nearby salt pans. Cecina de León is a cured meat product made from beef sirloin, centre leg, round and stifle. It is traditionally produced in the province of León. The production, which includes salting, curing and drying, can last for more than seven months.

Our Bresaola is a masterpiece from an Artisanal producer in Valtellina in the extreme North of Italy in a wonderful natural environment in the Lombardy Region.
The production process: before salting, the meat is selected on sight and trimmed. Salting is done dry, where the meat is sprinkled with salt and natural flavours. The meat is left to rest in brine for at least ten days. During this period, massage operations are carried out to allow for a faster and more uniform migration of the salt inside the product. This is followed by bagging in a natural or artificial casing. The sausage thus obtained is dried in special cells. Maturing occurs at a temperature between 12 and 18 ° C, in environmental conditions such as to cause a slow and gradual reduction of product humidity, in specially air-conditioned rooms where suitable air exchange is ensured. Both drying and curing last for a total of between four and eight weeks, depending on the size of the product and market demands.

They are the dried version of plums called “Ente” plums grown in the Lot-et-Garonne region.
The harvest happens between the third week of August and the third week of September. It is done using machines. Collars are placed around the trunks of the trees, which the machines then shake so that the falling plums are caught by the collars. The plums are then washed and sorted. They used to be first dried in the sun, then in ovens.
Some people say the Ente plum was in France since the Romans; others say it was brought there from Syria by the returning crusaders.
The monks at Clairac Abbey were the first to grow it.
Commercial production of the plums into prunes started in the 1400s in the Quercy and Rouergue regions. Export of the prunes had begun by the 1600s.

Forse retaggio dell’epoca in cui i Francesi contendevano il Meridione d’Italia agli Spagnoli, in alcune zone della Calabria si prepara un insaccato assai simile a quello francese, fatto con fegato, polmone e parti grasse del maiale.

The reason why it has been always a very salted cheese has to do with the power of Rome: salt have always been a currency and having that meant to have authority. Today this cheese is mainly done in Sardinia

Parmigiano Reggiano DOP 24 months 300g
Parmigiano Reggiano DOP aged 24 months from Gennari is produced exclusively in select regions of Emilia-Romagna and Mantova in the hilly and mountainous areas between the Po and Tyrrhenian rivers, with milk from cows that feed exclusively on locally grown forage. Each wheel is made from fresh unpasteurized cow’s milk, rennet, and salt.
Parmigiano Reggiano DOP Vacche Rosse 24M 300gr
Semi-skimmed raw milk obtained exclusively from Reggiana breed cows.
The paste has an intense straw color, a color that distinguishes this product.
Sweet and intense with notes of cooked and toasted butter.
This Parmigiano Reggiano to boast the 'red cows' brand must be produced exclusively with the milk of Reggiana cows, fed with at least 50% of fodder from the company (grass and hay) and with a maximum of 50% feed. (cereals and legumes) certified GMO free, unifeed feeding is prohibited and the forms must be aged for at least 24 months.
The Reggiana breed cows produce milk of excellent quality especially as regards the composition of the casein which makes it very suitable for cheese making. The post World War II policy pushed breeders to cross this breed with more productive ones. In 1980, there were less than a thousand of Fromentini leaders. The quality of the milk and new enhancement strategies, also supported by the Ministry for Agriculture and Forestry Policies and the Emilia Romagna Region, have since then led to a constant demographic recovery, so much so that the current consistency is 2565.
Parmigiano Reggiano DOP Vacche Brune 24M 300gr
Semi-skimmed raw cow's milk obtained exclusively from the milking of Brown breed cows.
The appearance is crumbly, both to the touch and to the eye, the paste is finely grainy, with an ivory white to straw yellow color.
Sweet and balanced, notes of hazelnut and forage are perceived in particular.
The processing is done, still today, as father Sergio wanted, a little fatter, designed for long aging; the technique is still the traditional one.
Lardo di Colonnata IGP
La storia di questa terra di Toscana unisce il prodotto principe delle Alpi Apuane, il marmo bianco, all’animale principe dell’alimentazione, il maiale. Il prodotto migliore si colloca senza sconfinamenti nel solo borgo di Colonnata. La configurazione orografica delle Alpi Apuane e la presenza costante del vento di scirocco creano infatti, solo qui in modo ottimale, un microclima adatto per la stagionatura del lardo, posto a maturare nelle vasche, o conche, di marmo dalla porosità ideale. Basta uscire dagli angusti confini per ottenere un prodotto di qualità organolettica inferiore; da qui la tutela IGP.
Ceci Neri BIO
Tra i legumi più insoliti e gustosi che si possono trovare in giro per l’Italia, un posto d’onore spetta certamente ai ceci neri. La produzione avviene in Puglia e in Basilicata. Rispetto al cece che conosciamo (Cicer arietinum), la varietà nera (che qualcuno, da queste parti, chiama “ceci del solco dritto”) si contraddistingue non solo dalla colorazione della buccia, ma anche dalla dimensioni più piccole, simili a quelle di un chicco di mais; e dalla buccia rugosa e irregolare. Leggermente diversi anche i valori nutrizionali, visto che il cece nero contiene tre volte la quantità di fibre del cugino ed è molto più ricco di ferro. Al punto che, un tempo, era consigliato alle donne in gravidanza e in allattamento.
Lenticchie Biologiche
L'Azienda Agraria Viola produce lenticchia da agricoltura biologica, pianta originaria dell'Africa settentrionale della specie lens culinaris. Le lenticchie sono un legume secco, tra i più digeribili, il cui consumo risale alla nascita dell'agricoltura in Mesopotamia. Le lenticchie Viola sono molto piccole e quindi più pregiate. Per tradizione si consumano stufate, come contorno al cotechino o allo zampone.
Farro Decorticato BIO
Il farro è un cereale davvero squisito, utilizzato in cucina praticamente in tutte le stagioni in quanto si tratta di un ingrediente versatile e ricco di sostanze nutritive. Fondamentale per una sana e corretta alimentazione, il farro può essere utilizzato per preparare piatti caldi d’inverno o pietanze “sostanziose” ma fresche in estate. Di origini molto antiche, il farro è abbastanza diffuso nella gastronomia italiana, specialmente in regioni come la Toscana e l’Umbria, dove il farro viene anche coltivato.
In linea di massima, si trovano in commercio due varietà diverse che sono il farro decorticato e il farro perlato. Il farro decorticato è in pratica quella variante che conserva la pellicola esterna del chicco, ovvero la glumetta, che viene invece eliminata nella variante del farro perlato. Il farro perlato può essere spezzettato e presenta una cottura molto facile, non necessitando nemmeno dell’ammollo preventivo che è, invece, indispensabile per il farro “grezzo”.
Miglio Biologico
Questo miglio organico è coltivato in Umbria ed è un eccellente cereale senza glutine ricco di minerale. Iniziare tostando i granelli fino a doratura e poi cuocere usando un rapporto tra 1 e 2 di miglio all'acqua. Cuocere per circa 15 minuti e provare la texture. Ottimo usato come couscous, con un po 'di burro o di olio d'oliva extra vergine.
Fagioli Cannellini BIO
I fagioli cannellini derivano da una coltivazione tipicamente toscana, presentano una forma sottile e allungata, sono di colore bianco lucido, è alquanto facile trovarli in commercio. Quello ovviamente che consente ai fagioli cannellini di essere molto salutari è l'ottimo bagaglio di poprietà nutrizionali che portano con sé. Si tratta di legumi che contengono poche calorie, ma soprattutto sono praticamente privi di grassi. 100 grammi di fagioli cannellini contengono circa 91 calorie.
Fagioli Borlotti BIO
Dalla doppia anima, verdura ed alimento proteico insieme, i fagioli borlotti sono anche buonissimi! Grandi e dall’intenso colore marrone rossiccio, i fagioli borlotti sono la varietà più diffusa e dal sapore più deciso; un vero concentrato di tutto il benessere dei fagioli.
Roveja Biologica
La roveja è un piccolo legume simile al pisello, dal seme colorato che va dal verde scuro al marrone, grigio. Nei secoli passati era coltivato su tutta la dorsale appenninica umbro-marchigiana, in particolare sui Monti Sibillini, dove i campi si trovavano anche a quote elevate: la roveja è resistente anche alle basse temperature, si coltiva in primavera-estate e non ha bisogno di molta acqua. Cresce anche in forma spontanea, lungo le scarpate e nei prati, ma nei secoli passati era protagonista dell’alimentazione dei pastori e contadini dei Sibillini con altri legumi poveri quali lenticchie, cicerchie, fave. La roveja, detta anche roveglia, rubiglio, pisello dei campi, corbello, si può mangiare fresca oppure essiccata, in questo caso diventa un ottimo ingrediente per minestre, zuppe.
Parmigiano Reggiano Gran Riserva 5 anni
Questo Parmigiano Reggiano viene prodotto solo con il latte di mucche di razza frisona italiana nate, allevate e cresciute in un piccolo allevamento. Tutto il ciclo di lavorazione è rigorosamente artigianale. Il Parmigiano Reggiano quando raggiunge i 2 anni di stagionatura viene riqualificato da esperti del consorzio di tutela e solo le forme eccezionali e di corretta maturazione vengono marchiate con il secondo marchio "EXTRA"; solo il meglio a questo punto raggiunge i 5 anni di stagionatura.
Il formaggio è straordinario: sapori inconsueti, sensazioni sconosciute e sorprendenti, sempre grande equilibrio che si nutre di potenza ed eleganza, mentre il colore imbrunisce con gli anni. L’aroma è fine; il sapore avvolgente, pieno, ricco, mai piccante, riempie la bocca.
Al palato è fondente, con le sensazioni grasse (la caseina, specie nelle stagionature più vecchie, è ben visibile) che tengono a bada un carattere spiccato. E’ un’esperienza nuova, che spinge in avanti il paradigma organolettico del Parmigiano e che fino a poco tempo fa era difficile solo immaginare.
Parmigiano Regginao Speciale 7 anni
Il Parmigiano Reggiano quando raggiunge i 2 anni di stagionatura viene riqualificato da esperti del consorzio di tutela e solo le forme eccezionali e di corretta maturazione vengono marchiate con il secondo marchio "EXTRA"; solo il meglio a questo punto raggiunge i 7 anni di stagionatura. Il formaggio è straordinario: sapori inconsueti, sensazioni sconosciute e sorprendenti, sempre grande equilibrio che si nutre di potenza ed eleganza, mentre il colore imbrunisce con gli anni. L’aroma è fine; il sapore avvolgente, pieno, ricco, mai piccante, riempie la bocca. Parmigiano Reggiano Garantito 18 mesi
Nascosti tra le poderose mura dei monasteri, i monaci benedettini iniziarono a lavorare il latte dei pascoli vicini per creare un formaggio di pasta dura che poi provarono a lasciare riposare per mesi su assi di legno. Era l'anno 1100. L'inizio di una esperienza straordinaria. Nove secoli di storia, lo stesso luogo d'origine, gli stessi rituali, la stessa dedizione, lo stesso straordinario gusto che ogni giorno portiamo in tavola con il nostro Parmigiano Reggiano D.O.P. Agricola Giansanti.
Diciotto mesi sono il periodo minimo di stagionatura, nel quale il formaggio sviluppa e matura tutte le caratteristiche nutritive che lo contraddistinguono. Il Parmigiano Reggiano Fresco Agricola Giansanti è un formaggio dal gusto morbido e rotondo, dal colore bianco latte, e dalla consistenza ancora parzialmente granulare. Per questo è consigliato principalmente come formaggio da pasto, da consumare durante un aperitivo o come antipasto nei pranzi in famiglia.
Parmigiano Reggiano Vacche Rosse 24 months
Produced with the milk of Red Cows of Reggiana’s breed, fed exclusively with grass, hay and certified no GMO feed, it is strictly prohibited to use any method to force the production, high attention to the animal well-being. Born from a particular limited cru area of Parmigiano Reggiano made from the milk of red patched Reggiana breed cattle traditionally used in the production of this cheese. This breed has subsequently been almost entirely substituted by the less valuable Friesian cows. Due to the characteristics of the base milk and for the care taken in making this ‘Red Cow’ Parmigiano Reggiano, whose forms are distinguished by the expression ‘Vacche rosse – razza Reggiana’ fire-branded on their surface (a smaller brand is also made on the underside), the quality of this cheese is particularly high. However, the production and consequent availability is very limited.
Montasio Tipico DOP stagionato 3 mesi
Prodotto in Friuli dal 1200 sui pascoli dello Jof di Montasio, solo nel XIII secolo grazie all'affinamento delle tecniche di lavorazione dei monaci dell'Abbazia di Moggio Udinese diviene un formaggio prodotto in pianura. Un prezzario datato 1775 parla di questo prodotto come un formaggio commercializzato insieme al prosciutto di San Daniele. Prodotto con il latte delle vacche di razza Frisona, Pezzata rossa, Bruna alpina, la cui alimentazione è stabilita dai regolamenti del Consorzio di tutela. La cagliata si ottiene col latte di due mungiture coagulato con caglio di vitello, viene rotta nelle dimensioni di un chicco di riso è cotta a 46°; scolata la massa dal siero di cottura, è deposta nelle fascere col marchio d’origine, pressata e salata a secco o in salamoia. Il Montasio stagiona secondo l’utilizzo, da 2-5 mesi per il tipo da tavola e dai 12 mesi per il tipo da grattugia. Schiacciata di pomodorini del Pignolo del Vesuvio DOP
Il Pomodorino del Piennolo del Vesuvio DOP è uno dei prodotti più antichi e tipici dell’agricoltura campana, tanto da essere perfino rappresentato nella scena del tradizionale presepe napoletano.
Le peculiarità di questo prodotto sono l’elevata consistenza della buccia, la forza di attaccatura al peduncolo e l’alta concentrazione di zuccheri che lo rendono un prodotto a lunga conservazione durante la quale nessuna delle sue qualità organolettiche subisce alterazioni. Caratteristiche legate ai fattori pedoclimatici tipici dell’area geografica in cui il pomodorino è coltivato.
In quest’ambiente, la qualità del pomodorino raggiunge punte di eccellenza, proprio la ricchezza in acidi organici determina la vivacità o “acidulità” di gusto, che è il carattere distintivo del pomodorino del Vesuvio.
Il Pomodorino del Piennolo del Vesuvio DOP per le sue qualità è un ingrediente fondamentale della cucina napoletana e campana in generale, ed ha una grande versatilità in cucina.
L’area tipica di produzione e conservazione del pomodorino, coincide con l’intera estensione del complesso vulcanico del Somma-Vesuvio, includendo le sue pendici sino quasi al livello del mare.
La zona di produzione e condizionamento è prevista dal disciplinare che ne regolamenta la produzione del Pomodorino del Piennolo del Vesuvio DOP.

Pecorino Toscano DOP Riserva Oro Extra mature
A precious cheese aged over six months. The paste is hard and granulose,the taste is persistent but sweet and palatable, with variegated and well balanced flavours. Made of sheep's milk, this Pecorino is hand selected by Tuscan cheese makers to become Oro Antico. This Pecorino is transformed over the course of six months by the simple application of olive oil. Once the cheese is glazed with the olive oil it is placed in a stone cellar where it begins its journey to maturity. As the aging process continues olive oil is intermittently applied and the cheese begins to develop its hard texture and distinctive piquancy. Once fully mature the pecorino is of golden hue and has become Oro Antico or in other words ancient gold. The final flavor is that of earth, wild herbs, and citrus.

Pecorino Riserva del Fondatore
Formaggio creato da Angela e Simone e dedicato al fondatore dell'azienda, come riconoscimento per aver lasciato loro la gestione di questa prestigiosa realtà. Questo può considerarsi "il Formaggio" per antonomasia del caseificio, quello più premiato ed apprezzato dell'azienda. È ottenuto da latte ovino altamente selezionato, prodotto con gli antichi metodi della tradizione e affinato in grotta.
Prodotto con latte ovino di Maremma, la maturazione avviene in cella per almeno 60 giorni poi segue la stagionatura e il successivo affinamento in grotta. Forma cilindrica grande, cm 35 circa di diametro. Scalzo leggermente convesso. Crosta rugosa e oliata. All'odore presenta un'intensità vegetale, fruttato. Il sapore è ampio con note di frutta secca, decisa tendenza dolce di lunga persistenza. La struttura della pasta è compatta e rigida, ma solubile. Presenza di microcristalli dovuti alla stagionatura.
Medaglia d'oro vinta nel giugno del 2013 al prestigioso "Mundial du Fromage et des produits Laitiers" di Tours (Valle della Loira); e, infine, il Super Gold come miglior pecorino al mondo a Londra nel novembre del 2014.
Ubriaco Cheese ripening in Prosecco DOC Wine
Ubriaco al Prosecco is made from pasteurized cow's milk. Affectionately called as "drunken cheese", it is bathed in gallons of sparkling Prosecco wine along with skins, seeds, and leftovers from the winemaking process to extract the unique sweet, delicate aroma of the wine and complex flavours. The cheese is immersed for about two months and then aged for about 6 months. The cheese absorbs the flavour of Prosecco wine. The fresh and elegantly salted cheese are best served in crumbles or thin shavings, obviously, with a glass of Prosecco.
Caciocavallo Abruzzese Affumicato
Il Caciocavallo è uno dei più antichi formaggi a pasta filata del Mezzogiorno d’Italia, formaggi la cui lavorazione prevede una fase finale di filatura da effettuare lavorando a mano la pasta in acqua molto calda. Questo tipo di caciocavallo subisce un'affumicatura con fuoco a legna e/o paglia naturale. Segue la formatura del caciocavallo e l'immersione della forma, per 1 ora circa, in acqua fredda per il rassodamento.
Caciocavallo Abruzzese Bianco
Prodotto con latte vaccino pastorizzato, all'aspetto si presenta di forma oblunga con una crosta sottile e liscia e una pasta compatta, di colore da bianco a paglierino, omogenea. Il sapore è dolce e delicato con spiccate sensazioni lattiche
Testun al Barolo DOCG
Viene prodotto da Occelli nel Caseificio di Farigliano (CN) con latte misto, vaccino e ovino, ottenuto da animali liberi di muoversi e alimentarsi sui pascoli estivi. Dopo 5 mesi di stagionatura nelle cantine di Valcasotto viene affinato in vinacce di Nebbiolo da Barolo. La crosta si presenta pertanto umida, di colore violaceo. La pasta è dura e compatta e può presentare qualche infiltrazione violacea. Il latte d'alpeggio conferisce al formaggio un sapore deciso, ricco di aromi di fiori e erbe, che l'affinatura in vinaccia arricchisce di sentori vinosi e di cantina. Formaggio dalla personalità decisa. Una volta che si assaggia questo formaggio non lo si dimentica più! Gusto pieno, il 'Testun' è rivestito con le uve pigiate utilizzate per fare il vino Barolo - i sapori del formaggio e dell'uva si mescolano insieme per creare un sapore che è cremoso, dolce, vinoso, burrosa e tagliente tutto in in una sola volta (testun liberamente si traduce in 'testa dura', in riferimento alla consistenza del formaggio). Una volta che si taglia attraverso il rivestimento del pigiato, la consistenza è friabile e si scioglie in bocca.

Pomodorino Ciliegino Extra Quality
Caratteristico per l'aspetto "a ciliegia" su un grappolo a spina di pesce con frutti tondi, piccoli, dal colore eccellente e il grado brix elevato. Il pomodoro ciliegino si consuma anche come frutta perché la sua polpa è particolarmente dolce.
Pomodorino Ciliegino Extra Quality
Caratteristico per l'aspetto "a ciliegia" su un grappolo a spina di pesce con frutti tondi, piccoli, dal colore eccellente e il grado brix elevato. Il pomodoro ciliegino si consuma anche come frutta perché la sua polpa è particolarmente dolce.
Pomodorino Datterino
Pomodorini a grappolo adatti per preparazioni di sughi espressi con olio extravergine aglio e aromi oppure per dare gusto e colore a insalate miste. Frutti piccoli di forma allungata dal peso dai 20 ai 40 grammi, buccia spessa e polpa consistente, il gusto ha un giusto equilibrio tra acidi e zuccheri. Povero di calorie ma dal sapore aromatico intensissimo, il pomodoro cocktail datterino è ricco di sali minerali, vitamina A e vitamina C ad azione riparatrice e rigeneratrice su tutte le cellule dell'organismo.
Pomodoro Rosso a Grappolo
Frutto sferico, molto compatto e resistente, assenza di spazi vuoti all'interno (scatolatura), peso medio intorno ai 100 grammi. La polpa è consistente e il sapore è leggermente acidulo. Ottima capacità di conservazione in frigorifero.
Pomodoro Marinda
Il pomodoro Marinda fa parte della tipologia Marmade ed ha origini francesi. È diventato uno dei prodotti principali per identificare la primizia di Pachino dato che ha trovato il suo habitat naturale in questa zona grazie alla tipologia dei suoi terreni, al clima particolarmente temperato -con irraggiamento solare costante durante tutto l’anno e con costanti brezze di ponente cariche di salsedine associate alle rare gelate-, alla particolare composizione dell’acqua salmastra utilizzata e alle acque saline delle falde acquifere che gli conferiscono caratteristiche uniche nel suo genere. È stato introdotto nel 1992-93 e da prodotto di nicchia è diventato un cult.
È un pomodoro costoluto che si distingue per la forma appiattita, per l’elevato numero di costolature -non meno di 10- e per la pennellata, che circonda la parte apicale, di un colore verde molto scuro e brillante, che lo rende esteticamente attraente. Il suo peso è di 100-150 grammi.
È un pomodoro invernale, infatti si raccoglie tra febbraio e maggio.
È il pomodoro dei ricordi, della nostalgia dell'estate: riconcilia nei mesi invernali con il gusto del pomodoro per il suo profumo di sole, per il suo ricchissimo sapore dolce, avvolgente, succoso, persistente, saporito, per la sua consistenza soda, croccante e compatta. È un pomodoro dal gusto intenso e squisito.
Pomodoro San Marzano
Il pomodoro, originario dell'America centrale, giunse in Europa nel Cinquecento, inizialmente in Spagna, dove ebbe un ruolo prevalentemente ornamentale. Si diffuse lentamente in Europa attraverso le Corti borboniche imparentate con i reali di Spagna. Solo nel XVIII secolo si sarebbe consolidato l'uso alimentare della pianta che, secondo alcune testimonianze, sarebbe giunta nel Regno di Napoli intorno al 1770 dove avrebbe trovato fertile terreno di sviluppo proprio nel comune di San Marzano. La zona di produzione del Pomodoro San Marzano si colloca nella regione Campania, in alcuni comuni delle province di Napoli, Salerno ed Avellino. La coltivazione avviene, esclusivamente, nei territori pianeggianti con possibilità d’irrigazione (sono escluse per le caratteristiche non idonee le zone collinari).
La varietà presenta forma caratteristica allungata, colore rosso, pelle sottile facilmente pelabile, polpa soda, pochi semi, sapore agrodolce.
Asparagi Verdi
Originario della costa asiatica dell’Europa dove vi sono diverse specie spontanee, l’asparago o asparagus officinalis, era coltivato già dagli antichi Egizi e fu molto apprezzato nella Roma Imperiale. Il nome deriva dal termine greco aspharagos o dal persiano asparag, ossia germoglio; in effetti ciò che si mangia sono i giovani germogli dei ricacci primaverili emessi dal tronco sotterraneo. Da un punto di vista energetico l’apporto calorico dell’asparago è solo di 20 Kcal/100 gr di prodotto fresco, ma ha interessanti proprietà salutistiche. E’ diuretico, è un coadiuvante contro la gotta, calcoli renali, reumatismi e idropisia e sembra avere un ruolo attivo nella diminuzione di casi di eczema. Ricco dell’amminoacido asparagina il suo consumo favorisce la fabbricazione di numerose sostanze proteiche, contiene inoltre rutina, che serve a rinforzare le pareti dei capillari.
Asiago Pressato DOP Nero
La forma presenta il classico scalzo convesso. La crosta è sottile ed elastica di colore nero, la pasta è di colore bianco o paglierino, è presente la classica occhiatura irregolare e leggermente strappata. Il sapore è dolce e tendenzialmente piccante, buone le note di latte e panna. Prodotto dal Caseificio San Vito (1899) la crosta nera indicat la stagionatura di 40 giorni circa.
Sedano Italiano
In Italia l'80 % circa della produzione totale di sedano proviene solamente da quattro regioni: Piemonte, Puglia, Emilia Romagna, Lazio. Grazie al suo profumo delicato ed al suo gusto particolarmente gradevole, il sedano è un alimento non solo particolarmente appetitoso ed apprezzato ma è anche un ortaggio in possesso di proprietà terapeutiche. La presenza di vitamina K è in grado di apportare benefici alla coagulazione del sangue e alle ossa, mentre il suo succo è un ottimo tonificante per la pelle e, se bevuto regolarmente per una ventina di giorni, può essere molto utile in caso di reumatismi; se diluito con l'acqua, può essere utilizzato come collirio per gli occhi. In caso di scottature o contusioni, un cataplasma di foglie fresche di sedano può apportare ottimi benefici alla zona "offesa".
Asiago DOP D`Allevo Mezzano Aged 4 Months

Radicchio Treviso Rotondo
Passata la grande calura estiva, nei campi, le verdi foglie del radicchio vengono dolcemente raggruppate e legate per permettere che il cuore, "al buio", sviluppi nuove foglie che, a partire dal mese di settembre, si mostreranno di colore rosso intenso. Lavato, il Radicchio Rosso di Treviso Precoce si presenta di buona croccantezza, moderatamente amaro, adatto a molteplici usi, sia cotto che crudo. Le foglie sono di sapore leggermente amarognolo e di consistenza mediamente croccante.

Asiago DOP Stravecchio Malga Verde Aged at least 15 Months
Rare Cheese, produced only in summer in mountain dairies with raw semi-skimmed milk from cows of Bruna and Frisona race.
The rind is smooth an regular. light brown in colour, the paste is straw yellow with a hard grainy texture and small to medium eyes.
First the taste is sweet and gradually growing more pungent, shows hints of toasted hazelnuts, ripoe fruit and aromas of freshly mown hay
Maturing at least 19 Months.
Cavolfiore
ll cavolfiore è un ortaggio appartenente alla grande famiglia delle Crucifere che si presenta con una testa compatta formata da tante“cimette” innestate su uno piccolo stelo centrale.Il suo colore cambia in base alla varietà e può essere bianco o verde. Il cavolfiore può essere consumato sia crudo che cotto. Crudo si mangia al naturale, in insalata come antipasto o in pinzimonio. Cotto, sia caldo che freddo, lo si può consumare insieme alle minestre, alla pasta, gratinato al forno con besciamella e parmigiano, nella preparazione di torte salate o più semplicemente condito con olio e limone. Per risultare più appetitoso la cottura deve essere al dente; se aggiungete qualche fetta di limone durante la cottura eviterete che le cime diventino gialle.
Cipolle Borettane
La cipolla borettana è conosciuta in tutta Italia per il suo inconfondibile sapore, prende il nome da Boretto, un comune in provincia di Reggio Emilia, in cui veniva coltivata fin dal 1400. Oggi però gran parte della produzione avviene nel parmense. È conosciuta anche come cipolla piatta di Como o di Rovato. È una varietà di cipolla molto utilizzata dall’industria dei sottaceti, in Emilia Romagna viene servita con gli gnocchi fritti, salumi e come accompagnamento in generale di secondi piatti. Ha come caratteristiche un bulbo molto appiattito ai poli, piccolo e con tuniche color paglierino.
Treccia di Aglio
L'aglio italiano fa parte della famiglia delle Liliaceae ed è il bulbo di una pianta simile al giglio le cui foglie crescono fino a 50-60 cm; il bulbo è costituito da diversi spicchi ciascuno dei quali è ricoperto da una pellicola bianca cartacea. Il bulbo ha radici fibrose; il fusto verde e liscio sviluppa lunghe foglie appiattite ed i fiori, bianchi o rosa, sbocciano alla fine dell'estate.
Lenticchie di Puy
Note anche come “lenticchie continentali”, hanno la caratteristica di restare compatte anche dopo la cottura. Il loro gusto delicato si sposa perfettamente con erbe aromatiche e spezie. Ingrediente ideale per molte ricette, possono essere ridotte in purè, usate per preparare crocchette e aggiunte all’insalata o al riso per un piatto completo. Non necessitano dell’ammollo.

Tradizionalmente legata al Friuli, dove in tempi antichi, i celti sono stati i pionieri in conservazione della carne di maiale con sale. Il San Daniele riserva Contessa è caratterizzata dalla presenza dello zoccolo. Tutti i prosciutti muniti del marchio di San Daniele sono maturati nello stabilimento Levoni di San Daniele del Friuli e sono conformi alle severe norme del disciplinare di produzione DOP. Le cosce provengono esclusivamente da suini pesanti del peso di almeno 160 kg, allevati in Italia settentrionale e centrale. Tra i prosciutti recanti il marchio di San Daniele, Levoni seleziona i migliori per far parte della linea "Riserva della Contessa", che hanno una maturazione minima di 18 mesi.

Mezzo Salame Finocchiona
La finocchiona è un salume tipico della Toscana, originario delle provincie di Siena e Firenze, che viene preparato macinando parti grasse e magre del maiale e poi aromatizzato con i semi di finocchio, da cui il suo nome finocchiona. La finocchiona è un insaccato "furbo", in quanto nacque, in epoca medievale, dall'abbinamento di maiale e finocchio, non solo perchè i semi di finocchio all'epoca erano meno costosi del pepe nero o di altre spezie che dovevano arrivare dall'Oriente, ma anche perchè il sapore del finocchio è talmente intenso da poter coprire eventuali imperfezioni della carne di suino. La pratica di usare i semi di finocchio era molto diffusa all'epoca per rendere buono e profumato anche un cibo o un vino poco appetibili, stantii o rancidi, tanto che nel tempo la parola "infinocchiare" ha assunto il significato di mascherare, ingannare qualcuno facendogli credere qualcosa di diverso dalla realtà.
Mezzo Salame Ventricina

La ventricina è un prodotto tipico delle terre d'Abruzzo e del Molise. Si caratterizza per la presenza di carne magra, di prosciutto e di filetto, macinata a grana grossa e grossi pezzi di pancetta tagliata a dadini. Nella fetta si distinguono molto bene le parti magre dalle parti grasse. Il gusto è particolare, dolce e piccante al tempo stesso, grazie alla presenza di peperoncino rosso piccante e di semi di finocchio.
Lingua Bovina Cotta in Stampo

Olio Extra Vergine di Oliva BIO
L'olio ha profumi intensi di pomodoro acerbo e di erba appena tagliata, una punta di carciofo. È delicato, rotondo. Poco invasivo, si presta a moltissime preparazioni e molti grandi chef lo usano in cucina proprio per questo. Il colore, giallo verde, ricorda le distese assolate dell’altopiano Ibleo, il sapore è mediamente piccante mentre l’acidità spesso non arriva a 0,1%.
Ricco di polifenoli , con perossidi bassissimi, è un antiossidante naturale. Molti sono i riconoscimenti ricevuti in concorsi nazionali ed internazionali. Lo conserviamo in silos di acciaio inox a temperatura controllata di 16° e sotto azoto per evitare processi ossidativi, poi lo imbottigliamo in azienda seguendo il metodo haccp. A Modena sono sempre esistiti diversi tipi di aceto ottenuti col mosto di uva, in relazione allo sviluppo nella storia di diverse ricette, di diversi metodi di preparazione e di invecchiamento. L’origine di questi prodotti risale alla tradizione degli antichi Romani. Il più noto produttore dell’epoca ('600) era Giuseppe Giusti, tutt’ora attivo membro del Consorzio Aceto Balsamico di Modena, le cui produzioni di Balsamico di Modena sono testimoniate fin dal 1605, e del quale sono rimasti gli attestati di partecipazione a numerose fiere ed esposizioni. Dal punto di vista normativo, risale al 1933 la prima autorizzazione ministeriale a produrre "l'Aceto Balsamico del Modenese".

La lenta maturazione in diversi tipi di legno, fra cui gelso, ginepro, castagno, ciliegio e rovere, gli conferisce una complessità particolare che lo rende ideale come complemento d’eccezione nelle grandi ricette o per essere degustato a gocce a fine pasto, per apprezzarne appieno tutti gli aromi e l’eccezionale densità.
Una sola goccia contiene tempo e passione, quelli delle generazioni che ci hanno preceduto. Straordinariamente complesso e corposo dal colore bruno carico e brillante è capace di offrire un ricco e armonioso crescendo di fragranze.
La collezione più esclusiva della casa, prodotta ogni anno in quantità estre- mamente limitata ed estratta da alcune preziose batterie di botti produttive dal 1700. Una di queste botti, codi cata come A3, fu portata dalla Giusti all’Esposizione Nazionale di Firenze del 1861 dove l’Aceto di 90 anni che ne venne estratto vinse una medaglia d’Oro, successo ripetutosi poi a Parigi all’Expò del 1889.
Iconicamente l’astuccio è composto dai 5 legni che compongono la tipica batteria di botticelle; l’etichetta frontale è incisa in oro 24 carati, mentre quel- la posteriore è realizzata con l’antica tecnica di stampa a caratteri mobili, uti- lizzando un carattere modenese in piombo dell’Ottocento.

Dal gelso, la cui porosità facilita la concentrazione dell’aceto, passando per ginepro, castagno, ciliegio, acacia, ognuno in grado di donare aromi differenti. L’ultimo passaggio è nel rovere, per raggiungere la perfetta densità. Il risultato è un aceto balsamico superlativo, di straordinario corpo, con un ampissimo bouquet di profumi e sapori che spaziano dalla ciliegia al cacao, dal miele alla vaniglia ed alla liquirizia in un crescendo di sensazioni olfattive che permangono per un tempo straordinariamente persistente nel naso e nel palato.

Macinato di Chianina IGP
Le Chianine nello specifico, le fattrici, vivono in uno stato di semibrado, pascolano tutto il giorno e alla sera rientrano in stalla per essere alimentate con foraggi freschi o secchi. Per quanto riguarda gli animali destinati alla produzione di carne, vengono svezzati ad un età di circa 4-5 mesi, quando il colore del loro mantello è virato completamente da rosso fromentino a bianco porcellana; rimangono in stalla per un periodo di circa 18-20 mesi, tempo necessario per il completo sviluppo dell’animale. L’alimentazione degli animali insieme alla razza, sono le componenti che permettono di ottenere un prodotto finale di alta qualità, con spiccate caratteristiche organolettiche e olfattive.
Carne succulenta, nutritiva, con un bassisimo contenuto di colesterolo circa il 2 %; queste caratteristiche si possono riconoscere dal tipico colore rosso scuro della carne e dal caratteristico grasso di marezzatura intramuscolare. Queste qualità derivano dalla razza, dall'alimentazione e dalla frollatura (>30 giorni).
