Pumpkin and Selenium Potato Pies recipe

Ingredients for about 3 pax (portions depending on the size of your baking mold):
Selenium Yellow Potato: 200g
Pumpkin Lorenzini Signature: 200g
Grana Padano grated cheese: 15g
Eggs: 1 pc
Caciocavallo Irpina cheese: 50g
Breadcrumbs: 50g
Salt: to taste
EVO Oil or Butter: as necessary

Pumpkin is the star of the autumn season and is perfect paired with potatoes. For this we offer you a very tasty and simple recipe to prepare: pumpkin and potato pies.

Wash the potatoes and boil them with the peel in salted water for about 30 minutes. The presence of the peel prevents the potatoes from absorbing too much water. In the meantime, clean the pumpkin, cut it into cubes and in a pan with a drizzle of oil and salt, let it cook, covered with a lid, for about 12 minutes, stirring often with a wooden spoon.

Once cooked, drain the potatoes and let them cool, then peel and mash them.
In a bowl, combine the mashed potatoes, pumpkin, grated Grana Padano, diced Caciocavallo, egg and breadcrumbs. Mix the mixture well to mix all the ingredients; if it is still too soft, add more breadcrumbs.

Grease the muffin molds and add some breadcrumbs. Once everything is blended, put the mixture in the molds, filling them to the brim. At this point, bake them at 190°C for 20 minutes. Check the cooking and eventually finish it with 5 minutes in grill mode. Take your patties out of the oven, let them cool for a few minutes before serving and plate them up.
